Located on level three of The Ritz-Carlton, Millenia Singapore, Colony alludes to the seafarious voyage that the British took to travel to the East Indies for trade and commerce in the late eighteenth century. An essence of urban living, the elegant British-colonial charm of the restaurant is characterised by an eclectic mix of vintage and bespoke furniture featuring tartan and houndstooth prints, alongside touches of modernity, while old maps, photographs and postcards adorn the walls and partitions, evoking the nostalgia of a bygone era.
Seven different conservatory kitchens, helmed by ‘live’ culinary showmanship, detail a food narrative of the culinary journey and heritage that transformed Singapore, which gave its cuisine, a sense of identity. Incorporating various cooking techniques, each ‘live’ kitchen showcases the best of Chinese, Indian, Indonesian, Malaysian, Western and local dishes, bringing diners on a culinary journey through Singapore’s heritage cuisines.
